“Lenticchie” for ABUNDANCE….

Sicilians don’t like to eat – they LOVE to! The rich soil and sea provide an incredible array of rich flavors and intense colors and textures.  We associate every holiday, event, celebration and season with particular foods…..and with these, come a series of almost supernatural/superstitious beliefs associated with them.  They may/may not be true – but I like to believe in this sort of “magic” that makes the journey so entertaining and fun….

2013 is here….before January 7….end of the Epiphany cycle….you must eat some homemade lentils – we generally use the classic, brown ones, but I like to mix it up and use either the green or orange ones….whatever your preference is.  For the perfect Sicilian lentil soup: add potatoes, carrots, onions, celery, freshly chopped tomatoes, enough water to cover, a pinch of salt and let simmer until cooked.   {Remember that lentils must sit for at least 20 minutes in water before they are ready to be cooked}.  This is one of the easiest, freshest, simplest, most comforting and nourishing soups to make during this gelid winter season.

For us, lentils equal ABUNDANCE — and they must be eaten within the first week of the year.  May ABUNDANCE come in any realm of your life that you feel is empty or in need of some pampering: whether it be finances, love, family, health, life…..

….just in case….I had two cups of lentil soup this time around….;)       it never hurts, right?    …….Ciao ciao.
